Easy quick dinner recipes is what I love. No one wants to spend hours in the kitchen! Right? Between the cooking, eating, and cleaning it can all be exhausting. You spend hours cooking and cleaning and are only on the dinner table for a max of 20 minutes! I admire the people in the world who enjoy cooking and don’t mind being in the kitchen for more than an hour. So many times I say I’m going to make homemade pizza…but at the end of the day ordering pizza always sounds like a much simpler and appealing plan.

I’m constantly searching for quick recipes; preferably ones that are made in the slow cooker. If you do not own a slow cooker, trust me when I say everyone needs to invest in one. Saves so much time, and you literally throw the food in the pot and let it cook without ever touching it! MAGIC!

I’am not a person who was blessed with being able to create her own recipes. My go to in finding dinner recipes is Pinterest…and my always reliable mom. Thank God for Pinterest and moms.

When I search for recipes I make sure the ingredients are easy to find, the max time total is under an hour, and it’s of course EASY TO MAKE!

Without any more rabbling, here are my personal favorite dinner recipes that I have collected over the years! Thank you to the incredibly talented chefs for these delicious recipes!

IF you are wondering why I placed this article in my self love category it is because cooking a homemade dinner can be therapeutic to so many people. You can’t beat homemade cooking.

CrockPot Chicken Tacos

One of my favorite meals! Tacos! Whenever we have guests staying at our house I make sure one these are on the menu! They are easy to make and my one of my favorite meals! It’s perfect if you are out all day. Just throw in the chicken, seasoning, and salsa and you are done! By the time you come back home dinner will be ready!

Apparently the recipe I always use no longer exists online. For the recipe though you need chicken breasts, taco seasoning, and salsa. THATS IT!

Instructions:

  • Spray your crockpot with Canola Oil and layer the bottom of the pan with whole chicken breasts (NO need to cut them into pieces, you will be shredding the chicken once it is fully cooked)
  • Dump your taco seasoning over the chicken. (I use Old El Paso Hot & Spicy Taco Packet, and I dump the whole packet. If you enjoy your food with flavor, do the same!)
  • After the seasoning is placed I pour a 16oz jar of chunky salsa over it.
  • No need to stir everything together! Place your crockpot on HIGH for 4-6hrs. I always place mine on HIGH for 5 1/2 or 6hrs. You can also cook it on LOW for 6-8hrs.
  • After the chicken is cooked through get two forks and shred your chicken in the crock pot!
  • PRESTO! Your chicken is done and ready to be served!

I always make it with a side of my homemade guacamole, Spanish rice, and fresh veggies. Get your self some tortillas and enjoy! Honestly it’s so easy and taste delicious!

I always have leftovers, so the next day I make nachos with the leftover chicken and it is absolutely delicious! I throw the chips on a pan with all the veggies, the Spanish rice, chicken, and cheese and bake it in the oven till the cheese bubbles. SO GOOD! Serve with guac and sour cream!

ONE SKILLET MEXICAN RICE CASSEROLE

Delicious and easy recipe! The only change I make to this recipe is instead of rice I make it with quinoa. It tastes delicious and my family honestly don’t even miss the rice. ALSO, I’m the queen of adding spices. So I know this says 1-2 teaspoons of the spices, but I honestly add 4 tablespoons of each of the spices (maybe more, I tend to just dump the spice directly over the pot without measuring). I need my food to have flavor! Anyone else ignore the recommended measures of the spices and do your own? A great easy recipe and you only need ONE POT to make it! Always a BONUS!

SWEET POTATO FRIES

Sweet Potato Fries

Not exaggerating when I say for a month I made these every other day for dinner. Served it with chicken and salad and I deemed it a healthy dinner. The recipe has an avocado dip that you can serve with the fries, but I have never made it. If you do decide to make the dip let me know how it is! Our go-to sauces tend to come in a bottle that is store bought.

AGAIN I do not listen to the measurements of the spices… I add 1/4 cup of Olive Oil, and I tend to do more than lightly sprinkle the paprika. Cut the potatoes very thin, and put the oven on 400 degrees Fahrenheit and bake for 20 minutes. I also do not flip the fries halfway. I have never needed to. Delicious dinner recipe though, and is actually on the menu for tonight’s dinner!

CHICKPEA VEGGIE BURGER

Chickpea Burger

A SUPERB vegan dinner recipe! I have yet to try to make homemade veggie black bean burgers, but these burgers made with chickpeas are divine! I do not have a barbecue so I make them over my stove, and they are a big hit with my husband who loves meat. Absolutely love this recipe because it doesn’t use Panko bread crumbs, so it is a great real HEALTHY recipe! We usually wrap our burgers in lettuce, and a big hit with them is using KALE as the base. So yummy!

CHICKEN LETTUCE WRAPS

Chrissy Teigen's Chicken Lettuce Wraps

I just made this recipe for dinner last week and LOVED IT! It was surprisingly easy, and it is also the first recipe I have made that a celebrity created. Chrissy Teigen sure knows how to create a good recipe. I loved it so much, I’m considering buying her cookbook. So tasty and the sauce was delicious. I made it with a side of chicken egg rolls and it was a huge hit for dinner!

THAI RED CHICKEN CURRY

Thai Red Chicken Curry

For this recipe, I omitted the chicken and added extra bell peppers and broccoli in place of it. I try every now and then to go on a meat break for a couple of weeks, and this was my go-to recipe for many dinners. The sauce is favorable, and the only ingredient I change is adding 2-3 tablespoons of red curry paste. Very easy recipe to follow and quick. I served the curry over quinoa, and it was DELICIOUS!

SLOW COOKER CHICKEN BURRITOS

Chicken Burrito Bowls

This recipe is a lot like the slow cooker chicken tacos I listed above, except you add rice into the slow cooker. Now because I apparently don’t read instructions properly I didn’t realize it asked for that. So I didn’t add the rice in and just ended up making Spanish rice over my stove. Also because I’m lazy I throw in the corn and black beans in the beginning, instead of adding them later. I cooked it on HIGH for 5hrs.

Quick and easy dinner recipe to assemble, and a huge hit. Served it with rice, guacamole, and sour cream and we made ourselves burrito bowls.

BLACKENED SHRIMP

This recipe is extremely quick, easy, and yummy! My favorite words when discussing dinner recipes! The only ingredient I take out is brown sugar. Whenever a recipe calls for sugar I usually just omit it, unless I’m baking! Does anyone else do this?

An easy recipe, and if you aren’t in the mood to cook it on the stove and have it splatter everywhere you can always bake it! Served with steamed broccoli and quinoa.

SLOW COOKER HONEY GARLIC CHICKEN

Honey Garlic Chicken with rice & Broccoli

A delicious dinner that is savory and definitely NOT bland! Extremely easy to make, and a great dish to serve with steamed vegetables and rice. Or in my case, I made it with quinoa. After making this I’m almost positive you will be adding this recipe to your GO-TO meals. Also a perfect comfort meal.

ZUCCHINI & BEAN STEW

Zucchini Stew with Tomato Sauce

Easy to make, vegan, and gluten-free! I added tomato paste, oregano, and garlic to my stew and it turned out scrumptious with tons of flavor.
